Pu-erh tea, which pronounced poo-air tea is produced in the Yunnan district in China. It is produced from the leaves and stems of the Camellia Sinensis plant. Different forms of tea including green, oolong, and black tea are produced from the same plant.

Although the same plant is used, each tea is made by using different processes. Green tea is not fermented, Oolong tea is partially fermented, Black tea is fully fermented, Pu-erh tea is post-fermented. Which means, its process includes both fermentation and also drying under high humidity.
